Hoja Santa is a pre-Hispanic herb, also known as Acuyo or Escosa.
Its flavor has notes of eucalyptus, anise, nutmeg, mint, tarragon and even black pepper.
It is used in Mexican cuisine to prepare tamales, meat, fish, mole verde, egg dishes, quesadillas, chiles rellenos. The whole dried leaves are a premium aromatic product from tropical to subtropical Mexico.
